PUREE OF BROCCOLI SOUP

So simple and so delicious, this soup takes only 10-15 minutes to prepare. Broccoli is rich with Vitamin C, Vitamin A (good for your skin), calcium, and fiber.

INGREDIENTS:
2 cups vegetable broth
2 heads of broccoli (approximately)
1 pinch of sea salt
1 pinch of cayenne pepper

DIRECTIONS:
Steam the broccoli over the vegetable broth. Remove the broccoli from the pot and put it in the blender. Add the salt and the cayenne, and blend in the vegetable broth until you have your desired consistency.

AYURVEDIC DOSHA CONSIDERATIONS:
Vata: Broccoli is acceptable in moderate quantities when cooked.
Pitta: Substitute the cayenne with black pepper.
Kapha: Enjoy as is.
